This is a very famous dish in southeast Asian. I know I ate this in Thai restaurant before.
Ingredients:
Method: 1. Chop celery and carrot, then cook in boiling water until tender.
3. Chop some of the pineapple. Set the rest of it aside. 4. Beat eggs ( I used two eggs.) 5. Clean shrimps, rinse with running water, then transfer to 6. Heatup cooking oil in saute pan, cook eggs into little pieces, then add vegetables, then shrimp. Transfer to plate for future use. 7. Heatup some cooking oil again, cook rice to hot, then add the vegetable mix to pan, add seasoning to taste. 8. Add pineapple to pan, stir evenly.
10. Put cooked rice to pineapple shell, press firmly. 11. Sprinkle grated cheese. If you don't like cheese, you can put the other part of the pineapple back to top. 12. Bake for 15-20 minutes.
