Rice with Pineapple and ShrimpRice with Pineapple and Shrimp

 

This is a very famous dish in southeast Asian. I know I ate this in Thai restaurant before.

 

Ingredients:

Rice with Pineapple and Shrimpcooked rice, pineapple, shrimp, egg, celery, carrot, grated cheese, seasoning.

 

Method:

1. Chop celery and carrot, then cook in boiling water until tender.

Rice with Pineapple and Shrimp2. Lay pineapple down, cut at 1/4 from top, then dig the pineapple from the shell.

3. Chop some of the pineapple. Set the rest of it aside.

4. Beat eggs ( I used two eggs.)

5. Clean shrimps, rinse with running water, then transfer to Rice with Pineapple and Shrimppaper towel.

6. Heatup cooking oil in saute pan, cook eggs into little pieces, then add vegetables, then shrimp. Transfer to plate for future use.

7. Heatup some cooking oil again, cook rice to hot, then add the vegetable mix to pan, add seasoning to taste.

8. Add pineapple to pan, stir evenly.

Rice with Pineapple and Shrimp9. Preheat oven to 375 degree.

10. Put cooked rice to pineapple shell, press firmly.

11. Sprinkle grated cheese.

If you don't like cheese, you can put the other part of the pineapple back to top.

12. Bake for 15-20 minutes.
