1. I don't have a wok, can I still cook Chinese dishes?

Of course. Actually, I don't have a wok in my kitchen. I use regular skillet to stir fry my dishes.

2. Why don't you give the exact weight on ingredients? How am I suppose to know?

Chinese cooking is not that strict on ingredients and seasoning, especially homecooking. Everything is to your taste, and your favorite.

We measure ingredients and seasoning in mind by experience and practice. If you cook a lot, then you'll know how much to use.
