Pancake with Darkon and Dried ShrimpPancake with Darkon and Dried Shrimp

 

This is a popular pancake (crepe) in China, especially north China. Of course, different family cooks it different way, so they might look different.

 

Ingredients:

flour, darkon, dried shrimp, green onion, seasoning.

 

Method:

1. Peel and grate darkon, mix with water, set aside.

2. Heatup skillet, add a little bit cooking oil, cook dried shrimp until golden crispy. Set aside to cool.

3. Chop green onion, mix with a little bit salt, set aside.

4. Drain darkon, then mix with dried shrimp, green onion, mix well.

5. Add flour and seasoning, water as needed, combine well to make thick batter.

6. Heatup skillet, add a little bit oil, spoon some batter into skillet, flat.

7. Flip over when batter's firm, transfer to plate when both sides are lightly golden brown.

8. Repeat until all batter's done.
