Sweet Potato CasseroleSweet Potato Casserole

 

I cooked this for a pot-luck party at work. Everybody told me that it tasted pretty good.

 

Ingredients:

Sweet Potato:

2 pounds sweet potatoes

1/2 cup sugar

1/2 teaspoon salt

2 large eggs

1/2 cup milk

1/2 teaspoon vanilla

4 tablespoons melted butter

Sweet Potato CasseroleTopping:

1/2 cup brown sugar

1/2 cup all-purpose flour

4 tablespoons melted butter

1/2 cup chopped pecans

 

Method:

1. Scrub sweet potatoes and cut in half if large. Boil in their jackets until tender. Let them cool.

2. Slip the peels off and mash well.

3. Stir in sugar and salt.

4. Whisk together the eggs, milk, vanilla, and 4 tablespoons melted butter.

5. Stir into the mashed sweet potato mixture until smooth and well blended.

6. Spoon the mixture into a lightly buttered 2-quart baking dish.

7. Preheat oven to 350 degree.

8. Combine topping ingredients; sprinkle over the sweet potato mixture.

9. Bake at 350° for 35 to 45 minutes.
