Potato Chowder with CauliflowerPotato Chowder with Cauliflower

 

I'm not a soup fan, but I love the potato chowder. Everytime I ate it, I told myself that I need to learn how to make it. Now here it is.

 

Ingredients:

8 slices bacon, cut into 1 inch piece

5 medium-sized potatoes cubed

2 medium-sized onions chopped

1 medium-sized size cauliflower, chopped

8-oz. carton sour cream

2 cup milk

10 3/4-oz. can condensed cream of chicken soup

seasoning to taste

 

Method:

1. In a covered saucepan, cook potatoes in water until tender, raise with running water, then drain.

2. Cook cauliflower same way.

3. Cook bacon in a skillet until crisp, then remove to paper towels to drain.

4. In the same skillet, saute onion in drippings until tender, drain.

5. Stir in soup, milk, sour cream and seasoning.

6. Add potato and cauliflower, cook on low heat for 10-15 minutes.

7. Crumble bacon, set aside a little bit.

8. Stir rest bacon into soup, cook for one minute.

9. Sprinkle the rest bacon when serve.
