Double Cooked Pork with LeekDouble Cooked Pork with Leek

 

This is a very popular dish in China. You can find it in every Chinese restaurant, unless they don't serve Chinese food.

 

Ingredients:

pork (belly), leek, Pixian spicy bean paste, preserved black bean, ginger root, garlic, seasoning.

 

Method:

1. Slice ginger root, peel garlic.

2. Put pork in cold water, along with ginger root and garlic, bring to boil, then simmer for 30 minutes.

3. Take pork out, rinse with warm water, cool.

4. Put pork in refrigerator to let meat completely cool down.

5. Slice pork, and cut leek to any shape you like.

6. Heatup skillet, no oil added, cook pork until you see some dripping. Transfer pork to plate, set aside.

7. Rinse preserved black bean with running water, drain.

8. Cook preserved black bean and Pixian spicy bean paste with dripping on medium low heat for one minute.

9. Pour pork back into skillet, cook for one minute.

10. Pour leek into skillet, cook together.

11. Add seasoning to your taste, constantly stirring until leek gets tender.

This is a very spicy hot dish, so be carefully when you eat it.
