Stir Fry Pig Liver with LeekStir Fry Pig Liver with Leek

 

I don't cook liver that often. But for the past year, I noticed that my eyes are getting older with me, and liver's good to eyes. So I decide to eat liver more, maybe once a month.

 

Ingredients:

pig liver, leek, dried pepper, seasoning.

 

Method:

1. Slice liver, then rinse with running water as many times as needed.

2. Mix a little bit vinegar with water, Soak liver for 2 hours.

3. Rinse liver with running water again until water get clear, drain.

4. Mix a little bit cooking wine with liver, mix well.

5. Mix some corn starch with liver, mix well. Set aside for a while.

6. Chop leek into any shape you like.

7. Wash red pepper, then drain.

If you don't like hot and spicy dish, you can skip the red pepper.

8. Add a little bit corn starch in a small bowl, then mix with water, soybean oil, vinegar, salt, sugar and black pepper, mix well.

9. Heatup skillet, add more oil then normal, add liver to skillet, cook until liver's not pink, transfer to plate, set aside.

10. Add oil to skillet again, cook pepper on medium high heat for one minute, then cook leek until tender.

11. Add liver back to skillet, cook with leek for one minute, then add the seasoning mixture to skillet, constantly stirring until the juice get thick.

12. Serve when it's hot.
