with Eggplant and Tofu
This is one of my favorite meatball recipes now. Those meatballs taste so good, that we ate all of them whthin two days.
Ingredients: ground pork, eggplant, tofu, green onion, garlic, flour, seasoning.
Method: 1. Cut green onion into little pieces, mix with a little bit salt, sit for a while. 3. Peel the eggplant, then cut into pieces, put into a microwave, cook until tender. You can steam eggplant instead of using microwave oven. 4. Cut tofu into several pieces, put into the boiling water, simmer for several minutes. Take tofu out, let it cool for a while. There are different kinds of tofu, firm or soft, or something in between. I prefer firm tofu myself. Because they taste more like the kind I had in my childhood. 5. Mix ground pork, minced garlic and cutted green onion together, add seasoning to taste. Keep stirring by one direction until sticky. When adding salt, you got to remember that you've mixed green onion with salt. 6. Crumble tofu and eggplant into tiny pieces, mix with pork. 7. Mix some flour with pork, make sure the whole thing looks smooth. 8. Heat up your deep fryer, fry meatball until golden brown. 9. Drain meatball well, and let them cool for a while. They're ready to eat!
