I have a big jar of plain yogurt. So now my baking goal is use all of the yogurt. Then I found this recipe, of course I did some change on ingredients based on what I got at home.
Ingredients: 1+1/2 cup all-purpose flour 2 teaspoons baking powder Pinch of salt 1/2 cup sugar 1/2 cup plain yogurt 3 large eggs 1/4 teaspoon pure vanilla extract 1/2 cup light olive oil 2 teaspoon lemon juice
Method: 1. Sift flour, baking powder, and salt into medium bowl. 2. Combine yogurt, sugar, eggs, and vanilla in large bowl, whisk until well blended. 3. Gradually whisk in dry ingredients. 4. Using rubber spatula, fold in oil. 5. Preheat oven to 350°F (175°C). 6. Spray a 8 1/2x4 1/2x2 1/2-inch metal loaf pan. 7. Transfer batter to prepared pan, bake about 50 minutes. Or until cake begins to pull away from sides of pan. 8. Cool cake in pan on rack 5 minutes. 9. Cut around pan sides to loosen cake. Turn cake out onto rack. Turn cake upright on rack and cool completely.
