I baked this dinner roll as the way to bake Korean Dinner Roll, but I changed the ingredients a little bit, so it just looks like Korean Dinner Roll, but still is the dinner roll.
Ingredients: Dough: 350g bread flour, 50g sugar, 1.5g salt, 3g dry yeast, 3g baking powder, 2 eggs, 100g warm milk, 10g dry milk, 2 tablespoon honey, 1 teaspoon lemon juice. Bottom: 10g cake flour, 5g sugar, 5g sesame seeds. Topping: 1 egg yolk, 1 tablespoon honey, 1 tablespoon water, sesame seeds, melted butter.
Method: 1. Mix dry yeast and 2 teaspoon sugar, add warm milk, set aside for about 10 minutes. 2. Add all the liquid ingredients for dough into yeast mixture, mix. 3. Mix all the dry ingredients for dough, add to yeast mixture, for a smooth dough, set aside until double sized. 4. Knead the dough down, separate into 12 pieces, set aside for about 10 minutes. 5. Roll each piece into a long oval shape, then roll up into a short roll. 6. Cut the roll in middle, turn to two pieces. Rotate roll by 90 degree, then press down with finger from the top. 7. Put the ingredients for bottom in a bowl, mix well. Get another bowl, put in some water. 8. Spray the baking pan with no-stick spray. 9. Wet bottom of rolls with water, then use the bottom hit the ingredients mixture, transfer to baking pan, set aside until double sized. 10. Preheat oven to 400 degree. 11. Mix egg yolk, honey and water, blend well, brush on top of rolls, sprinkle sesame seeds, bake for about 12-15 minutes or until golden brown. 12. Brush melted butter on top of rolls after taking rolls out of oven, then transfer to wired rack to cool.
