Dinner Roll with Starter Dough
This is my first time to try the starter dough. It tastes pretty good.
Ingredients: Starter Dough: 75g bread flour, 6g sugar, 53g boiling water, 30g butter. Bread Dough: 225g bread flour, 36g sugar, 105g warm milk, 3g salt, 4.5g dry yeast, 30g egg, 12g dry milk. Topping: 1 egg yolk, 1 tablespoon honey, 1 tablespoon water, proper amount melted butter.
Method: Chop butter into small pieces, add to boiling water, heat until boil again, remove from heat. Add flour and sugar, form a dough, lightly grease when cool. Refrige for 18-24 hours. 2. Take the starter dough out of refrigerator, set until warm to room temperature. 3. Mix yeast with 6g sugar, then mix with warm milk, set aside for about 10 minutes or until you see lots of bubbles on top. 4. Mix flour with salt, rest of sugar, dry milk. 5. Tear the starter dough into little pieces. 6. Add egg into yeast mixture, then mix with flour mixture and starter dough, for a smooth dough, set aside until double size. 7. Knead down the dough, seperate into 12 equal pieces. 8. Roll each piece into a long oval sheet, then roll into a long roll. 9. Shape rolls as shown in pictures. 10. When done, set roll aside until double sized. 11. Preheat oven to 350 degree. 12. Mix egg yolk, honey and water, brush on top of rolls, bake 15-20 minutes or golden brown. 13. Brush butter on top right after take rolls out of oven, set to cool.
