I haven't cook with red bean paste for a while. All of a sudden, I just thought about it, so I found a pretty shape of bread online, and here it is. I bought the red bean paste from grocery. There might be several type of it, and some may be not sweet at all. The one I use is very sweet, so I did not add much sugar in dough.
Ingredients: Dough: 200g (1.5 cup) bread flour, 1 egg, 30g (2 tablespoon) butter (room temperature), warm milk 100g (100ml), 2 teaspoon dry yeast, 2 teaspoon sugar, 1/4 teaspoon salt. Filling: red bean paste Topping: beaten egg, almond slices
Method: 1. Mix yeast and sugar, then mix with warm milk, set aside for several minutes until see bubbles on surface. 2. Beat egg, the add to yeast mixture, mix well. You can save a little bit of beaten egg for topping later. 3. Mix flour and salt, then add to yeast mixture, form a dough. 4. Add butter to dough, knead until dough's smooth. 5. Put dough in a lightly greased bowl, set aside to let it rise until double sized. 6. Knead dough down, then seperate into six equal portions. 7. Take one portion dough, roll into an oval shape. 8. Spread bean paste on top, then roll the dough up. 9. Slightly flat the roll a little bit, then make about 8 diagonal cuts with scissors. 10. Shape the dough as shown in above picutures, pinch the end shut. 11. Transfer roll to a greased baking sheet, set aside until double sized. 12. Preheat oven to 350 degree. 13. Brush beaten egg on top of roll, then sprinkle with almond slices, bake for about 20 minutes.
