I love stirring fry eggs with anything. Black Fungus is one of my favorite choice to go with eggs.

 

Ingredients:

egg, black fungus, onion, seasoning

 

Method:

Stir Fry Egg with Onion and Black Fungus1. Soak black fungus with water until black fungus become soft. Clean, rinse, and drain.

2. Heatup skillet, add some cooking oil.

3. While waiting on skillet heatup, mix a little bit cooking wine and eggs, beat well.

4. Pour egg mixture into skillet, set heat on high, stir constantly, until all egg's firm. Transfer to plate, set aside.

5. Add more cooking oil to skillet, adjust heat to medium high. Add onion to skillet, cook until tender. Add a little bit soybean oil to get darker color, mix well (you don't have to if you don't like darker color).

6. Add black fungus to skillet, cook until you start hearing noise from skillet and black fungus start dancing and jumping.

7. Add egg back to skillet, add seasoning to taste, mix well.

8. Add one or two tablespoon water into skillet, constantly stirring until water's gone.

9. Transfer to plate, serve when warm.
